My Day with Larry The Cable Guy…Git R Done!



Before I begin, I must inform you that I had been a fan of Larry The Cable Guy (Aka: Dan Whitney) before I met him. I LOVED him and anything to do with the Blue Collar Comedy Tour. (Which also starred Ron White, Jeff Foxworthy and Bill Engvall) So you can imagine my surprise when Justin, one of my college peers (whose aunt was the event manager for the Nutter Center) asked me if I wanted to be the runner for Larry The Cable Guy when he came to campus. There was no question. It was set for a Wednesday, which was my busiest day of the week. I think I had every single class that day but it didn’t matter. I ditched them all.  I was not going to miss this opportunity.
I had to be there about 10 AM when the buses and trucks arrived. I had no idea what to expect, except that I was not to ask for any pictures or autographs WHILE I was working, and I pretty much just had to do what the production crew manager asked. Easy Enough.

First I met with the production manager Terry and a couple members of the team who travel with the show. They were all very nice and down to earth (I later learned that most people with this type of job aren't). They told me there wasn’t much I needed to do at that point so I could just sit in the lounge area and wait for whenever someone needed me. I went over my Spanish flashcards and sat around with the crew, who were busy renting out a bowling alley for their next stop on the tour. It was someone’s birthday so they were doing this with very little notice but the bowling alley didn’t seem to mind. You drop Larry The Cable Guy’s name and I guess everyone is at your beckon call. Oh yeah....and no one bowls anymore so why would you turn that kind of business down?
My first job was to drive all the bus and truck drivers to the hotel across the street so they could check into a room for the day and sleep. I guess this makes sense but I was unaware that people who are drivers for any sort of comedy or music tour basically have to be nocturnal. They sleep during the day and drive at night. That is how everyone gets to the next city by 10 every morning. Still….that has to be exhausting, but the guys didn’t seem to mind. I am sure they are well-paid.
I returned to the Nutter Center shortly afterward and still no sign of Dan (aka: Larry. But I am going to refer to him by his actual name because I just don’t feel like typing out Larry the Cable Guy a hundred times. And everyone in real life calls him Dan.) That was short-lived though because as we were all congregated outside, Dan made himself present. I did my best to not act shocked and maintain my composure because I didn’t want to be “that person” who freaked out because OMYGAWD That’s LARRY THE CABLE GUY!!!! After making small talk with his crew members, Dan looked at me and started pointing to all the trees surrounding the Nutter Center. He mentioned all the pretty colors of the trees (It was fall) and how it looked just like his underwear streaks. I busted out laughing and asked him what the hell he was eating and told him he needed to use more TP. He laughed. (Yay Me!)
The crew began to discuss lunch options and I told them all the places there were to eat around there and they decided on Chilis. Dan was, at the time, doing Nutri-system and had lost a bunch of weight so he opted out of the Chili’s adventure. Not that I was going to stay and eat with them, but it would have been cool to say I drove Larry the Cable Guy around in my car. HA! Which brings me to my car. I had a Dodge Intrepid. This meant I was going to have to make 2 trips to get everyone to Chili’s. There was just 1 more person going than my car would seat. (This will play into the story later) So I took 2 trips and everyone made it. Terry told me he would call me when they were done so I had some downtime. I used this time to meet up with Justin and our friend Jeff on campus and basically freak out about how awesome it was that I met Larry The Cable Guy. Little did I know, that was just the beginning…

Terry called me after about an hour and a half so I could go pick everyone up at Chili’s. They all decided that they did not want to wait for me to make 2 trips and since The Nutter Center was literally right down the street from Chili’s, so 4 grown men crammed into the back of my car, 1 across the laps of the other 3 while Terry sat up front . Everyone laughing in hysterics! I had to take a picture. Here ya go:




So my crammed-ass car hauled everyone back to the Nutter Center where I had more down time. Dan even hung out with us for a while and asked me questions about myself (and my Spanish flashcards) and even talked about his ex girlfriend and his veneers he recently got. (Yes he showed me before and after pictures) Justin later told me this was not normal and you usually never have down time. Dan’s crew is just the most laid back crew to work with. Lucky Me! After a while I was called out to the 2 buses that were parked in the loading area. They were Dan’s bus, and the bus of Reno Collier, his opening act. Reno and Dan were both sitting in his bus and Reno stepped down to the door where I was standing. I didn’t get on the bus but I got a good glimpse of the inside. HO-LY Crap! I have yet to see a house that was as nice as the inside of this bus (At least what I saw of it) There was a leather seating area in the front with a HUGE flat screen mounted on the wall. It was super decked out and super nice. I guess if you are an act as big As Larry The Cable Guy and you spend a lot of your time on the road, I can understand why you would want it to be nice, especially if you make a doctor’s annual salary in ONE show. (No not exaggerating at all. No wonder these dudes rent out bowling allies at the drop of a hat) Reno was very nice and handed me some cash asked me to run to a gas station and pick up some beer and a couple cans of Skoal. Easy enough, right? WRONG! Not for me. I got in my car and called Justin. He asked me how it was going. I said great except for one tiny problem:
“Um…Justin? What’s Skoal?”
Now I have to admit, even though I am from the Midwest and I like country music and redneck jokes, I was a 22 year old female who had never smoked a day in her life and had only started drinking 2 years earlier. I had somehow managed to remain sheltered enough to not know what DIPPING was let alone Skoal. Justin explained it to me, and although I was still confused, I managed to find that AND the beer they wanted. (this will also play into the story later)
As soon as I got back, I was instructed to pick up one of the truck-drivers and take him through the McDonalds drive through so he could have something to eat. He drove a semi-for lots of famous acts. I asked him to tell me the worst person he worked for and he said George Lopez. I can’t remember why though. Sorry! Just know that George Lopez sucks.
So lets see…(This was about 5 ½ years ago so I am trying to piece this in order as I remember it). After I got back to the Nutter Center, people were starting to pour in. I walked back to the lounge area and it was full of a catered food spread. I was told to grab some by Dan himself, so I did. Fans and some VIP began to pour into the lounge area as well and Dan slipped out of his sleeveless NRA shirt he was wearing and into his plaid flannel sleeveless shirt he wears for his show. He came out and began to talk to some fans and the VIP people who were there. Turns out a lot of them were high-ups for Wright State University (My college).
This is the part of my story I ALWAYS make a point to tell people when they ask about working for Larry The Cable Guy. As Dan stood and talked to the WSU people, he offered each and every one of them food from the spread that was laid out. This is the spread that is for the crew only and he offered it to everyone. The one person who did take him up on his offer was an 8 year old boy who was there with his parents who had something to do with the University. He took Dan up on his offer when he asked him “You want sumtn ta eat?” The little boy grabbed a plate and Dan actually walked behind the boy and helped him fix his plate. At the time I thought that was the coolest thing ever. He is this huge star who makes all this money and has all these people who come out just to see him and he is still a humble person. Now that I actually have a son, I know for a fact I would have done the exact same thing. I can’t imagine how hard it must be to be on the road and away from your family. He has a son who was very young at the time of this, so it broke my heart a little bit to know he was probably missing him like crazy and this helped him feel better.
While Reno took the stage, Dan did his meet and greet with a bunch of fans that won contests. By meet and greet, I mean they all lined up, got their picture taken, and were shoved out the door. So if any of you win VIP passes or something to a show or concert, do not expect to sit around, drink beers and shoot pool with your favorite star. Only I get to do that. As much as you want to believe this will happen, it won’t. These people do this for a LIVING and they are in a different city every night doing this meet and greet crap every night with hundreds of people who were just as lucky as you. I can’t blame them for probably being exhausted and this is just another part of their routine. Sorry if I crushed your dreams. L
After Reno came off the stage, it was Dan’s turn. Terry told me that there was really nothing for me to do at that point and asked me if I would like to watch the show from the side of the stage. Like….practically front row!! Um…..Gee let me think about that! I sat on the lighting boxes and watched the whole show…and let me tell you….I laughed so hard that my stomach was sore the next day. All the police/security at the front of the stage were stifling laughter as well. Blue collar comedy is funny. (I don’t care who you are that’s funny right there.) If you disagree, then pull the stick out of your ass and get the hell off my website!
This is where it gets fun…As the show ended, we all headed back to the backstage lounge area where Dan talked to a few more WSU fans. I sat around with some of his crew and somehow we got on the subject of dipping. I admitted to Dan that I had no idea what it was and had to call someone. He laughed and held the can out for me to try some. So like the ill-informed idiot I was, I did. At first I didn’t really understand what all the fuss-OH HELLO wicked buzzzzzzz! OOOOOO! I feel Gooood! I asked for more. Dan gave me more. More buzz!!! I started to loosen up and joke around with the crew while Dan met with some more VIPs. One guy on the crew was laughing at my reaction to the buzz and offered me a beer. Hells Yeah!!! Let’s keep this party going!!!! By the time my boss at the Nutter center came over to me to say goodnight and give me my money, I had a beer in my hand and a huge wad of dip in my mouth. That probably looked SUPER professional.
So as I was talking to the assistant production manager about Skyline Chili and all things Cincinnati, THAT’s when it hit. Yep. You guessed it. Nausea. I immediately took the dip out, but it was too late. It didn’t come on bit by bit. It was like a freight train hit me. I sunk down in my chair and tried to act like I WASN'T about to hurl my guts up. He almost immediately asked me if I was ok because I had turned PALE white. (Ugh I am sitting here feeling nauseous just from remembering this) I told him I had to go barf and got up to hunt down a bathroom. It was coming up though, so I had to settle for a trash can under a desk that was in this hallway off to the side. I tried to be inconspicuous, but a couple of the fans saw me. One lady was super nice and grabbed me bottled water from the refreshment table and sat down with me after I hurled. Bless her heart.
So anyway, after I puked I felt completely normal again as if nothing happened. I came back out and tried to play it off as such, but everyone already knew….and I got ROASTED for it for the rest of the evening. Word even got around to Dan what had happened and he started calling me “barf girl”. The guy who originally gave me the skoal felt so terrible and kept apologizing. I told him he needed to buy me Wendy’s since my stomach was now empty hahaha. Instead, they invited me to join their poker game. It had been a long day and I was no longer needed and was allowed to leave but you can bet your ass I stayed. It was me, Dan, Reno and a couple of guys from the crew. Since they are all loaded they played with big bills and since I was a poor college student at the time, Dan put my money in for me. And let me tell you….this dude carries a wad of cash around in his pocket that could be a down payment on a house. It was literally a bunch of 100 dollar bills in a money clip. I tried not to act surprised though….I don’t know if I was successful.
We played Texas Hold em and it was honestly the BEST TIME EVER. We sat around talking like a bunch of friends and I even forgot a few times that I was sitting around with a couple very famous people. It was very natural and at one point Reno announced “This chick is awesome!!!!” and slapped me a high five. (It was because I told him that purple Gatorade turns your poop green and my roommates and I had tested the theory) And I even won a few hands!! After a while, it got late and I needed to get up for class the next morning. I thanked all the guys for letting me play and completely ignored the no picture rule and asked Dan for a picture. He was more than willing to oblige. Especially since he and all his friends made me barf and I was a good sport about it.
Then he reached into his pocket and pulled out his bulging wad of cash. He handed me 3 of his $100 dollar bills and said “Thank you for sticking around and hanging out with us. It was fun!”
I had never been so shocked. What an amazingly-nice thing to do! I didn’t get paid a whole lot working at the tanning salon on campus and this was going to help me buy Christmas presents that year. All on Larry the Cable Guy! I was so excited when I jumped into the car. Because of the adrenaline rush all day long I had hardly eaten, and what I DID eat was sitting in the trash can under a desk at the Nutter Center, so I picked up my Wendy’s and called everyone I knew on the way home to gush about the day I just had! What a day it was! And to this day I still talk about it!!!

I have a few reasons for posting this story. First off, it was pretty cool. Secondly, people always see this picture of me on my facebook and want to know how I got to meet Larry The Cable Guy. But most importantly, I wanted people to know what a down to earth nice guy he is! His crew was extremely friendly and low maintenance and he is just another guy earning a living and having fun while doing so. I have heard so many horror stories about other stars performing at the Nutter Center and what a nightmare they are to work for. To some people, Larry The Cable guy is just some dumb redneck who tells stupid, classless jokes…but what they don’t know is what a class act this guy truly is.

Creamy Crock-Pot Spaghetti



Most of my recipes that I post on here are things most people would be able to cook on a weeknight in a matter of 20 minutes or so. This one is an exception! I prepared this on a Sunday during Brady's nap and after 3 hours in the crock pot is was delicious! Anyone can cook noodles and past sauce on a stove and have it ready in 15 minutes. I find that to be very bland and unsatisfying. This spaghetti is FULL of flavor and the recipe makes a ton of it, so you can freeze it for those week nights when you may not have the time to put into such a tasty dish! (PS- Like any crock pot recipe, this is super easy to prepare)

Ingredients:

  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 3 (26 oz) jars pasta sauce
  • 1 pound spaghetti noodles
  • 1/2 cup Parmesan cheese
  • 4 oz 1/3 fat Philadelphia cream cheese; cubed
  • 1-2 cups chicken broth

Directions

  • Cook/Brown the beef in a medium skillet over medium heat until crumbled and brown. Season with salt, pepper, and garlic powder. Drain the fat from skillet.
  • Pour 1 jar of the pasta sauce into the bottom of the crock pot at high heat.


Break spaghetti noodles in half and place over the sauce.


Pour the cooked beef over the noodles.


Sprinkle with Parmesan cheese and top with the cubed cream cheese.


Pour another jar of pasta sauce over the cream cheese and close the lid.


Cook on high for 2 hours. Give it a good stir (It will be very thick) Add the last jar of pasta sauce and 1-2 cups of chicken broth (more if you want thinner sauce) Close the lid and let it cook another hour or until ready to serve.

I'm BAAAAAAAAAAAACK!

Well I hope no one missed me too much!! I will be honest with you. Doing 2 posts a week burned me out pretty quickly. I am a busy lady with a job, a child, a house, a Steve, and a blog. I needed a little break to read some books and relax and stuff. I also wanted to take the summer and just spend it with my family without taking pictures of our dinner preparation every night. Also, my camera broke so I needed to get a new one. I recently celebrated my 28th birthday and guess what one of my presents was? A new camera!!! So you all can thank my husband for this blog coming back into fruition. Here is a picture of Brady and me celebrating the new camera on my birthday.



Weeeeeeeeeeeeeeeee!!

 Ok. So I am hoping everyone who reads this enjoyed their summer. Since I was gone from here most of the summer, I thought I would catch everyone up on what has been going on in the life of the Millers!

In July, we spent a week in Alpena Michigan, which is where my parents are from originally and they own a little house on Lake Huron. Along with my family and my parents, my sister who lives in Washington DC joined us with her family. It was a blast!!! I think the best part was when the kids would nap and my sister, my mom, my aunt and myself would sit out in a 4 person raft on the lake and just lounge in the sun and drink beer. It's not very often that I get to do that these days. It was a relaxing trip and everyone had a great time! Here are a few pictures from the trip:

Sour Cream Art!

In August, Brady had surgery to put tubes in his ears since he was getting so many ear infections. It was so hard to sit and hold him while they put him to sleep and it was probably harder on us than it was him, but this kid was a ROCKSTAR!! The procedure only lasted about 15 minutes and he was a little groggy and pukey after the surgery, but when we got him home and got some food in his tummy, it was as if nothing ever happened. He did great and so far, no more ear infections!!




Steve and I celebrated 1 year of marriage in Nashville Indiana. Don't be fooled. It's nothing like Nashville Tennessee and I would not reccommend the night life because frankly, there is none! We did however, have a great time during the day, ziplining and enjoying eachother's company, and at night when all the shops shut down at 6 PM (WTF?) we drank beer and just hung out with each other, which is something we do not get to do very often.

My sister and her family visited a few weeks ago and we took the kids to see Thomas the Tank Engine and ride him! They loved it! It was so fun to see Brady react to seeing Thomas up close and personal! He loved it!!






And finally, I decided I hate how plain the front entryway of our house looks. There is a front room that is completely bare because we have yet to put any furniture in it. We will eventually, but in the mean time, I decided there is no reason the front entryway can't use a little work right away. Here is the before pic:

I purchased a few floating shelves from Bed Bath and Beyond, a bulletin board, a calendar, some hooks from Home Depot and some decorations from Hobby Lobby and Michaels. I also crafted some blocks with our names on them and made a sign to hang with some wood and chalk board paint and Voila:




Not perfect, but definitely better than before!!

So there ya have it! That was the Reader's Digest version of our summer! I am one of those people with Obsessive FALL Disorder so I am excited for the change of season and for all the fun things (decorations, crafts, recipes) that come with this time of year, especially celebrating Brady's 2nd birthday! I also have more rants to stick in here as well! And by popular demand, I may end up recapping a few episodes of The Bachelor and other stupid reality TV fluff. So stick around! Much more to come!!

10 Things I Live For

Since last time I was all Negative Nancy on you, I figured this week I will switch gears and rave about 10 things that do the opposite of annoy me. 10 things I love! If you don’t find this as entertaining as the last post then whatever. I don’t care. I do this blog more for myself anyway so if you read it, great. If not, I WILL NEVER FORGIVE YOU!!!!!!
Ok all joking aside….
10. My son’s laugh
This is a given. Every parent loves their child’s laugh. Even if I am having the worst day in the world, the sound of pure and utter joy coming from this child’s mouth makes it irrelevant. I LIVE for my child’s happiness. Anyone who is a parent understands this. And also…he has a pretty freakin funny laugh…He kind of sounds like Randy from A Christmas Story

9. Listerine Strips

I have an unhealthy addiction to these. I hate hate hate bad breath!!! I hate it when others have it and I hate when I can’t tell if I have it or not. This is the only way to be sure I don’t have bad breath. I keep these in my kitchen, in my purse, and in my desk at work. I have one or two of these after every time I eat. I also feel like they are an appetite suppressant at times. If I eat something small and start craving more, I pop one of these in and I don’t really crave it anymore.
8. Walking outside with a jacket on and realizing I don’t need it.
I am not a winter person. At All. Usually in the morning before I wake Brady up, I step outside and make sure he doesn’t need a jacket. This morning I stepped outside and the temperature was perfect! Sunny, warm weather and the fact that I have one less item to take out of the house with me makes the day THAT much better.
7. This:

For anyone who really knows me, you know that Bonefish is the best restaurant ever made. I base this on one reason alone. Bang Bang Shrimp. Drooooooooool!!! If I were on death row, THIS would be my last meal! I also need to mention that every bite of food I have EVER consumed at this place has been orgasmic. If you have NOT tried this restaurant….YOU NEED TO!!!! GO!!!! NOW!!!!!!!!
6. These smells:
               -The smell of a candle after it was just blown out. I have no idea why. Maybe it is nostalgic (Birthday parties from childhood?) Or maybe it is just like the gasoline phenomenon….where people secretly love the smell and have no idea why.
               -Sunscreen. This definitely IS nostalgic. I grew up basically living at a pool. I did swim team, lifeguarded, taught swim lessons, taught private lessons, you name it, I did it…The smell of sunscreen takes me back to those summers where life was just easy! I got paid to hang out at a pool! How could life get any better than that???
               -The inside of the Tractor Supply Store. This is the weirdest one yet. There is some weird rubbery smell that I smell when I go in there. I know it’s weird…But it just smells awesome to me?
               -Lavender baby shampoo. I used this in my son’s hair whenever I give him a bath. When I hold him as he drifts off to sleep shortly after, I can’t help but keep my nose buried in his hair. It is the most calming smell ever. When I was in labor with Brady, before I had my epidural, the nurse actually put some of these lavender pouches in the front pocket of my hospital gown and they helped with the pain!! Just by smelling them! Crazy huh?
5. This Place:

Carlsbad California is a town about 30 minutes north of San Diego. I have been fortunate enough to have visited there about once a year since I was 6. It started out as a business trip for my dad one year that we accompanied him on. And we just kept coming back every year to the same hotel until my dad finally just bought a time-share there at The Tamarack Beach Resort. It is the most laid-back vacation you will ever embark on. We sit by the pool, eat at restaurants, go to Karaoke night, sit on the beach, drink beer, and hang out with all the locals we have come to know. Everyone in this town is SO friendly (how could you NOT be with 75 and Sunny weather EVERY day year round) and I feel like we make new friends every time we go! Steve and I even went here on our honeymoon just because we already know the good spots to eat, hang out and relax! Our next mission is to bring Brady. I am not crazy about subjecting him to the 3 hour time difference just yet, but I know we will sooner rather than later. Our kid already has the surfer dude look down, so now we need to introduce him to the ocean!

4. This Show:
Call me white trash but this is my favorite show of all time. I own every episode on DVD and I have even been to the house they use in the photos:

Just to be clear, I didn’t go on some long trip to see this house. I’m not THAT weird. My sister-in-law used to live in Evansville IN (where the house is located) and I asked if we could go see the house when we were visiting one time. I can’t believe she took us without hesitation or at least without telling her brother how weird I am and maybe he should reconsider…
I don’t know. There is just something about a smart-assed blue collar woman who tells it like it is that I just can’t get enough of. This show was genius!! All of the jokes and lines could NOT have been written with better timing and delivery! And the storylines were so perfect and I felt like it truly depicted a middle class family living in the Midwest. My favorite character from this show would no doubt have to be Jackie, Roseanne’s sister which Lori Metcalf won a well-deserved Emmy for. My favorite all time episode would have to be from season 6 titled “A Stash from The Past”. Look it up on YouTube. The bathroom scene between Dan, Roseanne and Jackie is probably the funniest scene in television history (well to me anyway). And if you really don’t understand that type of humor then get the hell off my blog!
3. The sound of a pop can or bottle opening.
Ahhhhhhhhh

A lady I used to work with knew damn well that she was not to bring a soda bottle or can back from the vending machine already opened. She always waited to open it until she got back to her desk so I could either hear the crack and fizzle of her can/bottle opening. She knew it meant THAT much to me. One thing I did NOT give up on weight watchers was pop. I usually drink 1 can of Coke Zero a day at lunch because I just freakin love it. And those sounds of opening cans and bottles mean the beginning of a cool and refreshing carbonated experience!
2. Autumn


As much as I hate the fact that it is going to get cold soon, fall is my favorite time of year. I am your typical cliché pumpkin patch pickin’ hay ridin’ cider sippin’ type of person. Every year around this time I get really annoying about going to any type of Fall event we can find. (Ask my husband) The fact that I have an almost 2 year old makes this about 100x amplified because he is finally at an age where he can do all these things with me and enjoy it! And secondly he was born right before Halloween so I am hoping he will grow to love this time of year just as much as his mommy! This year, especially since we are in a new home in a pretty rural part of town, I am going to be SUPER excited about it! I cannot wait for hay rides, pumpkin carving, decorating the house, visiting Barn N’ Bunk (a local farmers market with all sorts of activities) and taking my little pumpkin Trick-or-Treating in our new neighborhood! Oooooga Booooga!

Besides wanting to be a famous singer since I was 11, I have kept my dreams pretty simple. I knew someday I wanted to be a wife and a mom. I never expected it would creep up on me as soon as it did, but it made me the happiest I have ever been. Authentically happy. Knowing I have married my best friend, given birth to the most beautiful and happy child in the world, and own a beautiful home for the 3 of us to live in together, makes me feel extremely accomplished in my 27 years of life. As many changes as my life has had in the past 2 1/2 years, I am graciously happy for almost all of them. It is such a comfort knowing that wherever life may take me, I will have these 2 along with me for the ride. Nothing makes me happier than that….although if someone were to open a soda can right now that would make everything that much better….

Nacho-Rific Stuffed Chicken



I found this recipe from the Hungry-Girl franchise. If any of you are looking to lose weight and are unfamiliar with this website, familiarize yourself with it. www.hungry-girl.com It is a wonderful way of turning dishes that taste great but aren't so healthy into healthier versions of the same dish. I picked this dish up from the website and made a few changes to it. It is originally 6 points for 1 stuffed chicken breast. I usually make mine a little bigger and add lowfat sour cream so mine will be between 8 and 9 points and is perfect for refrigerating and eating leftovers! Oh and I forgot to mention.....it is sooooo tasty!! Here is the recipe:

Ingredients:

  • 3-4 5 oz boneless, skinless chicken breasts; pounded (Mine are usually a tad bigger than this. If you want to go by the book, this is what you will need to make sure the point value is correct)
  • 1 cup canned, fat-free refried beans.
  • 1/2 cup low-fat mexican blend cheese
  • 3 wedges Laughing Cow Chipotle Fresco cheese
  • 16 baked Tostitos Scoops
  • 1 teaspoon reduced-sodium taco seasoning
  • Salt and pepper to taste
  • Sour Cream and Scallions for garnish

Directions:
  • Preheat oven to 350. Spray a baking sheet with non-stick spray and set aside.
  • Put the chips in a sealable plastic bag and crush with hands or a rolling pin. Then add the taco seasoning to chips and give the bag a good shake. You should have something that looks like this:

  • Next, combine the refried beans, shredded cheese, and laughing cow cheese wedges in a bowl


  • Place the chicken on a flat, clean surface and season both sides with salt and pepper.

  • Spoon filling into the center of the chicken and roll up. Transfer to the baking sheet seam-side down.

  • Cover each stuffed breast with the crumb mixture.

  • Cover chicken with foil and bake in the over for 22 minutes. Remove foil and bake an extra 15-20 minutes. (Cooking time may vary depending on the size of chicken you use)
